As you may know, the secret of the “Prosciutto Dolcevalle” is a delicate curing process, as well as the humidity and controlled temperature of the cellar in which it is cured. This precise mix gives the prosciutto the sweetness and aroma that distinguishes Prosciutto di Parma all over the world. The mark DOP is only awarded to Prosciutto di Parma made in the province of Parma, in the area to the south of Via Emilia, the ancient Latin road that links Rimini to Piacenza.
