Finocchiona (Fennel Salami), 100g (8 slices)
This fennel infused salami is a classic of the Florence area, and has been around since Renaissance times at least. The fennel gives it a very distinctive, refreshing flavour with notes of menthol that sits beautifully with the cured meat. Once tried this salami often becomes a firm favourite; it’s a great salami to pair alongside the salami Toscano.
Recommend wine: Rosso Di Montepulciano.
Recommended cheese: pecorino.
