Spain’s most famous cheese with a firm, ivory to golden paste, sometimes dotted with a few small eyes, and a lovely creamy yellow rind. Ripened 6 months.
INGREDIENTS: Sheep milk, salt, rennet, lactic cultures, calcium chloride, preservatives: lysozyme (egg).
